Blueberry Banana Muffins

Happy Monday!!! Hope everyone had a great Valentine’s Day this weekend, but if you are like me then you are definitely still in a chocolate coma.


Enter blueberry banana muffins.  A quick and easy muffin that will help you get over the chocolate overload. I love to make a batch of muffins on the weekend and then freeze them for an easy breakfast for the whole week.

Even your most pickiest eater will love these.


Add a smear of butter (or even cream cheese, yum) and you are good to go!


And then serve them a your very own personalized cutting board! Isn’t this awesome???

Blueberry Banana Muffins

Blueberry Banana Muffins
Serves: 24
  • 1¼ cups sugar
  • ½ cup butter, softened
  • 2 eggs
  • 1½ cups bananas (3 to 4 medium)
  • ½ cup buttermilk
  • 1 teaspoon vanilla
  • 2½ cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup fresh or frozen blueberries
  1. Heat oven to 350°F. Line two muffin tins with liners.
  2. Mix sugar and butter in large bowl. Stir in eggs until well blended.
  3. Add bananas, buttermilk and vanilla. Beat until smooth.
  4. Stir in flour, baking soda and salt just until moistened. Add blueberries, and stir until just incorporated.  Don't stir too much as you will break the blueberries.
  5. Fill each muffin tin about ⅓ full.
  6. Bake for 20 mins.  The muffins are done when a toothpick inserted in the middle comes out clean.
  7. Eat!


Banana Oatmeal Cookies {vegan and gluten free}

Have you guys see those cookies floating around Pinterest and Facebook that are pretty much just bananas and oatmeal?

Well, I tried them for you.

And you know what?  They aren’t half bad.  Especially when you add in chocolate chips.


Just a few ingredients to healthy cookies that you could totally eat for breakfast!  Plus, no added sugar.  Make sure to taste your dough though.  I added a little stevia to mine.


Plus, it’s always fun time in the kitchen with photo bombers like these!

Banana Oatmeal Cookies {vegan and gluten free}
Serves: 12
  • 3 ripe bananas mashed well
  • ⅓ cup unsweetened applesauce
  • 2 cups oats
  • ¼ cup milk (any kind)
  • 1 tsp vanilla
  • 1 tsp cinnamon
  1. Preheat oven to 350 degrees.
  2. Mix together all ingredient.  Scoop onto a greased cookie sheet and bake for 12-15 minute.
  3. Eat!


Banana Peanut Butter Kale Smoothie

I seriously have a love hate relationship with kale and how everyone pretends how good it tastes.

“No, really you can even taste it!” Yeah right. I can taste it.

Anyway, when you pair it with peanut butter is somehow becomes easier to drink. Not kidding.

Would I lead you astray?


I’ve kinda of been hooked on these lately, since our winter has been pretty much non existent in Southern California, a nice cool drink has seemed like the right thing to do.

In fact we are in a severe drought.

Banana Peanut Butter Kale Smoothie

Banana Peanut Butter Kale Smoothie
Serves: 1
  • 1 frozen banana
  • 1-2 tablespoons peanut butter
  • 1 cup kale, torn off the stems and roughly chopped
  • 1 cup almond milk
  1. Place all ingredients in a blender, and blend.  It make take a little while.
  2. Drink!

If you don’t have a frozen banana, add some ice to the blender.  You want your drink to be cold. Either way it works and tastes great.

I don’t have a very high powered blender, if you do then you won’t have the little green flecks that I do.  It will still taste the same either way.

Feel free to add some protein powder.
