Twice Baked Sweet Potatoes with Streusel Topping

Need a last minute sweet potato recipe for Thanksgiving tomorrow??? Well here it is.  Twice baked sweet potatoes with streusel topping.  Does it get any better than this?


Start by cooking off some sweet potatoes.  I like to try and get some that are about the same size so they cook at the same time.


When they are fork tender they are done.


Cut in half and scoop out the flesh. Be really careful to leave some flesh in the sweet potato jackets as the skin by itself is really flimsy and will tear easily.


Place the sweet potato flesh in a bowl and add butter, brown sugar, cinnamon, and a touch of salt.


Use a masher or hand mixer to mix it up really well.


Scoop the filling back into the sweet potato skins.

Make the streusel topping.  Butter, brown sugar, flour.  Cut in the butter (or use a hand mixer like I did) until the butter is the size of peas.


Top the sweet potatoes with the streusel topping and place back in the oven to brown the topping.


Sooooo good.

Serves: 6
  • 4 lbs sweet potatoes (for me it was 4)
  • 4 tablespoons butter
  • ⅓ cup brown sugar
  • 1 teaspoon cinnamon
  • pinch of salt
  • For the Streusel Topping
  • ½ cup flour
  • ½ cup brown sugar
  • 4 tablespoons butter
  1. Preheat oven to 400 degrees.  Bake the sweet potatoes on a foil lined baking sheet and bake until fork tender, about 1 hour.
  2. Slice in half lengthwise and scoop out the flesh being careful to keep the skins in tact.
  3. Place the sweet potato flesh, 4 tablespoons butter, ½ cup brown sugar, cinnamon and salt in bowl and mix until smooth.
  4. Scoop the mixture back into the sweet potato skins.  (Note: I like to fill my skins up pretty well, so even though I cooked 8 halves I only ended up filling 6 of them)
  5. Place the streusel topping ingredients in a bowl and cut in the butter until it is pea sized.  Sprinkle over the sweet potatoes.
  6. Place back in the oven and cook for 15-20 minutes or until the streusel topping is browned.
  7. Eat!
